Hi everyone.
It feels so nice to just be sitting down and writing a chatty post for the first time in a long while (It's like old times).
I felt like a life update was long overdue on here. I feel like I haven't had an opportunity to update you on things going on in life or on the blog, so here's my chance.
Excuse me while I organise this post under subheadings (I'm an organisational freak)
Fitness.
Okay, so I'm attempting to up my fitness game. I have got to the point where I've been doing the same routine for a year, so I'm seeing no progress. I've decided to add a PIIT (blogilates) session here and there, along with running or going to the gym. I forgot how good it feels when you have a killer workout session. I will be sure to update you on my fitness regime soon.
Diet.
Recently, I've been finding that I haven't been feeling good after eating bread or having too much dairy (a hugely bloated feeling). I don't at all think I am allergic to gluten and don't think I'm lactose intolerant, but I have decided to attempt to cut down on them. (I am drinking more almond milk), I am feeling quite a bit better after making these changes.
Work.
A lot of recent life has consisted of hard work at my job. As you may know (if you've read my blog for a bit) I am a Zumba instructor and gym instructor. I love my job. I love it, I love it. I feel so grateful to do my job and recently, I have really realised how much I enjoy it.
Studies.
Yikes! It's getting intense and I am trying not to get overwhelmed with it all. I have gone through all the emotions; have I chosen the right subjects? Am I going to pass? What am I doing? Do I need to work harder? Do I need to relax?...Eve needs to take a break (as you can tell)
Blog.
I love my blog, but I am not insanely happy with the layout and content at the moment. There are little things about the layout that are bugging me, but I haven't got the time nor the patience to get round to sorting them out right now (and no, I don't want to pay to have it sorted). I am setting myself the target of posting once a week (and more is a bonus), I can't pile loads of pressure on.
New Project.
I have some exciting things planned, for myself and for the blog. I am about to embark on a new chapter in my fitness career (if all goes to plan) - I will post about it soon. I am also working on something super exciting (to do with my blog), but it's all super secret right now (just incase it all falls through). Eek...I can't wait to share with you all soon!

Ingredients:
1 chopped banana
1/2 - 1 tablespoon of peanut butter (I like crunchy)
1 teaspoon of honey
almond milk (or another milk you'd prefer)
Pop all ingredients into a blender and BAM!

Hello! I know this post is a tad late since Pancake day was Tuesday, but I just discovered and tried out a whole new recipe to make pancakes that is super guilt free as it only really has two ingredients; a banana & eggs.
(You can obviously play around with it and add things where you feel necessary).
These pancakes are fantastic for a healthy and filling breakfast or as a pre/post workout snack or even just as a little treat during your day!
Ingredients:
One Medium Banana
2 eggs
(I also added a TINY amount of baking powder to make them fluffy & a little dash of Vanilla extract to add a little more flavour.)
How to make:
1. MASH THAT BANANA:
Chop the banana into tiny pieces and then squish it down with a fork until it is smooth and like a thick liquid (try to get rid of as many banana lumps as possible, but a few here and there won't do any harm). Using a hand whisk can be helpful to finish off the job.
(at this point you can also add any extra ingredients)
2. EGG TIME:
Crack those two eggs into another bowl and mix them together until the yolks and whites are completely combined.
3. ADD THEM TOGETHER:
It's time to mix the banana and eggs! When doing mine I used a hand whisk to ensure the two had completely combined.
4. PRE HEAT THE HOB:
Make sure your hob is heated and prepare your pan (I added a low calorie olive oil to the pan to avoid the chance of the pancakes sticking - you could instead add a bit of butter or vegetable oil.)
5. LET'S COOK 'EM.
Once your pan is hot (this is important, or we'll have issues) you can add your pancake mix (I advise making the pancakes small - I find it works better). Wait about 50seconds/1 min before flipping with a spatula, then wait a further 50 seconds or so before removing the pancake. Repeat until all of your mixture is used up! I managed to make 4.5 little pancakes.

TIP: Want more protein? Add protein powder to the recipe!
**NOTE: THESE ARE DELICIOUS IN THEIR OWN SPECIAL WAY - THEY DO NOT TASTE LIKE YOUR AVERAGE PANCAKE!:) Play around with the recipe to make it suit you.

Hey everyone!
Happy weekend! I hope you're all okay and have had a good/okay/bearable week. Today I wanted to share with you another wish list I have put together for the workout wear I have my eye on. This editions items all come from probably my favourite shop of all time: The Zumba Wear Shop! Recently Zumba released a brand new collection: the 'Ready...Set...Glow' range and I love everything!

Aren't they all so lovely? I love the positive message Zumba sends with their clothing, for example 'Crazy Happy'. This specific collection glows...yes GLOWS!! How amazing is that? Pretty amazing you ask me!
Honestly, I am a huge fan of Zumba wear (and not just because I'm a Zumba instructor)- there is something in the shop for everyone, for different types of exercise (not just Zumba) and the quality & design of the clothing is fantastic (for a pretty decent price tag).
